Recipe: Great Aunt Lucile’s Blonde Brownies

These Blonde Brownies are deliciously addictive and they make the perfect snack during a long day of admin for our wildlife volunteers at Ithala Game Reserve, South Africa.

Ingredients:

2/3 cup butter or margarine

1 pound of brown sugar

3 eggs

2 2/3 cup flour

1 ½ teaspoon (tsp) baking powder

½ teaspoon (tsp) salt

1 cup of chopped nuts

6 ounces of chocolate chips

Method:

Melt the 2/3 cup butter in a deep saucepan. Add 1 pound brown sugar and mix well.

Let it stand to cool for 10 minutes.

Add the 3 eggs, one at a time to the butter and sugar mixture.

Then add the following flour mixture: 2 2/3 cup flour, 1 1/2 tsp baking powder and 1/2 tsp salt.

Mix well.

Add the cup of chopped nuts and 6 ounces of chocolate chips to complete the brownie mixture.

Pour the brownie mix into a greased and floured 13×9 pan.

Bake 30 – 40 minutes at 350ºF / 180ºC
